Mushroom Kurma

Ingredients:

  • Mushroom : 250 gms

  • Mustard seeds : 1 tsp

  • Turmeric powder (food grade) : 1/2 tsp

  • Coconut (grated) : 4 tbsp.

  • Tomato : 2 (diced)

  • Dried Red Chile : 4

  • Cumin seeds : 1 tbsp.

  • Jeera : 1 tbsp.

  • Sombu : 1 tbsp

  • Poppy seeds : 1 tsp

  • Badam nuts : 4

  • Ginger : 1 inch size (cut in medium size pieces)

  • Bay leaf : 1

  • Glove : 1

  • Onion : 2 (sliced in small pieces)

  • Salt - to taste.

  • Green Chile -small - 1 (optional)

 Method:

In 1 or 2 tsp of oil fry dried red Chile, Cumin seeds, Sombu, Popy seeds, Badam nuts, Glove each separately.
Add all above fried item in a mixer and add coconut, ginger. Make this into paste by adding water in between grinding in mixer.
In a non stick Tawa add 4 tsp oil. Once oil is heated add Mustard seed. Once it is spluttered, add sliced onion, green chili and bay leaf and fry it. Add tomato and turmeric power and fry it.
To this add the grinded paste and 500 ml water and enough salt. Add sliced Mushroom. Allow it to boil till good aroma comes out.
Garnish with coriander leaves and serve hot.
This is good side dish for Parota and Chapatti.
