Tomato Soup
Ingredients:
Tomato : 5 big
Garlic : 7 flakes (crushed).
Small Onions : 1 cup
Bay leaf : 1
Glove : 1
Turmeric Powder : 1/4 tsp.
Oil : 1 tsp
Butter : 1 tsp.
Soup Powder : 2 tbsp (Use the Soup Powder Link to get recipe for making Soup power)
Salt - to taste
Carrot -small 1 (sliced) - optional
Cauliflower - 20 to 50 grams (sliced) - optional
Method:
Extract Juice from tomatoes and keep it aside (about 1.5 liters - if juice is not up to 1.5 lit, add water).
Heat oil in a kadai , add Gloves, Bay leaf, crushed Garlic and Onions. Fry for few minutes till good aroma reaches.
Pour the extracted tomato juice, Soup Powder and Turmeric powder.
Bring it to boiling stage and add Vegetables to it.
Allow the soup to boil for 10 to 15 minutes in low flame till vegetables are cooked. Add required salt.
finally add butter and garnish with coriander leaves and serve hot.
This Tomato soup suits to eat with iddly.
Tip:
To make tomato juice:
1. To remove the tomato skin easily: Bring water to boiling point. Stop heating. Add tomatoes into the water. Cover with lid. Keep it side for about 5 to 10 minutes. Then peal the skin.
2. Put the tomatoes in mixer and crush it and filter to remove seeds (For people having kidney stone problems it is better to remove tomato seeds)
